Mile High Layer Cake

This pound cake recipe is large enough to make four 9-inch layers that can be stacked for an impressive homemade mile high layer cake!  

Mile High Layer Cake

4 sticks of softened butter

4 cups all-purpose flour

1tsp baking powder

4 cups granulated sugar

10 eggs

2-3 tsp vanilla extract

1 cup whole milk

¼ cup lemon juice

Directions:

Cream butter until the consistency of mayonnaise.  Then add sugar and beat on medium high for 4-5 minutes until it is lighter in color and looks like fluffy sand.  Slow mixer to lowest setting and add eggs one at a time. Then add vanilla extract.  Add lemon juice to whole milk in a measuring cup.  Slowly alternate adding flour and milk/lemon juice. Beat on a low speed for 2-3 minutes—just until well blended.  As an alternative, you can blend this by hand if the recipe is too large for your mixer.  Pour into four greased and wax paper-lined 9-inch layer pans.  Bake on 315 degrees for 20-25 minutes.  Just until a toothpick comes out clean. 

Icing:

1 stick of softened butter

1 package of cream cheese (8oz)

4-6 cups of powdered sugar

1 tsp vanilla extract 

With a hand mixer, cream butter and cream cheese together.  Then slowly add powdered sugar.  Begin with 4-5 cups, and add more sugar if you need a stiffer icing (about 1-2 cups more) You don’t want your icing to be too runny when you are using it to stack cake layers. On the other hand, if your icing gets too thick to spread easily, you can always add 1-2 tablespoons of milk or whipping cream.  Ensure your cake layers are completely cool before stacking and frosting cake layers.  Be creative!

Wisdom of the Ages

We honor our elders who have poured into us and laid a foundation of faith and wisdom.
