Oreo Chocolate Cake

This Oreo cake was a hit for my son’s birthday!

Chocolate Oreo Cake

Cake:

1 chocolate cake mix

1 brownie mix

1 cup oil

4 beaten eggs

1 ¼ cups water

Blend ingredients with a hand mixer.

Bake layers on 325 degrees for 18-20 minutes.  Be careful not to overbake. This recipe makes two 9-inch layers. Doubling the recipe makes four layers.

Oreo Cream Cheese Icing:

12 Oreos

8 oz cream cheese

1 stick of butter

1/2 tsp vanilla extract

2-3 tbsps heavy cream

4-6 cups of powdered sugar

Crush Oreos and put aside. Then beat cream softened butter and cream cheese with a hand mixer on medium speed.Add extract, heavy cream, then slowly add powdered sugar to your desire consistency.  Finally add crushed Oreos.

A Firm Foundation

In the video, you will see that while making this cake that I decided to double the recipe and make four layers.  The cake will turn out to be moist, chocolatey, and the Oreo icing is perfect.  There is just one thing…despite the dowels and cardboard you will see that there was one small issue with the cake, and it lay at the very bottom of the cake.  The bottom layer.  I put it on top-side down, I don’t know why.  It would not have mattered if I had taken the time to shave it perfecting with a knife.  But I have gotten away with not doing that for three layer cakes, and with a little icing and reinforcement, it has always worked out.  But that wasn’t the case for four layers.  It began to lean before I could even finish it.  I spent the whole next day before my son’s birthday worrying that the cake would not survive the 20 minute drive to the birthday venue and the party!

The foundation matters.  It doesn’t matter much what you do after the fact if the foundation isn’t right.  We can try to dress it up and cover it up all we want.  But if we don’t have a foundation of faith and obedience in Jesus, everything else is shaky.  Take care of the foundation first, make it a priority to hear the words of Jesus and act on them.
